Recipe: Chocolate Rainbow Cookies


So the Superbowl came around this past Sunday (go Ravens!) and I couldn't fiugre out what to feed a house full of men for dessert. I originally wanted to make cupcakes but was running low on time and decided to make cookies instead.

These funfetti cake mix cookies are super yummy. I like my cookies a bit on the crispy side and these have a good snap to them. If you prefer them a little chewier, bake them for about a couple minutes less.


I started by mixing a box of funfetti cake mix with 1 1/2 teaspoons of baking powder. I mixed that up and added 2 eggs, 1/2 cup of vegetable oil, 1 teaspoon of vanilla extract and 1/2 cup of mini chocolate chips. 


Mix that all together until it forms a good cookie dough consistency.  It's going to seem a little oily/greasy, but it helps so it won't be so sticky as some cookie doughs tend to be.


Roll them up into balls and flatten them on the sheet. I forgot to use cooking spray for one batch and they turned out fine, but I would spray the aluminum foil just in case. Bake them in the oven for 10 minutes at 350 degrees and there you have them. It took maybe 5-10 minutes of prep time easy and baked the first while i got the second ready.


These were really yummy and a big hit with all the guys.

Chocolate Rainbow Cookies

1 box of funfetti cake mix, 18.9oz
1 1/2 tsps of baking powder
2 eggs
1/2 cup of vegetable oil
1 1/2 tsps of vanilla extract
1/2 cup of mini chocolate chips

In a large bowl mix the cake mix and baking powder. Mix well. Add eggs, vegetable oil, vanilla extract and chocolate chips. Mix until well blended and has a cookie dough consistency. Roll into balls and flatten on a cookie sheet. Bake for 8-10 minutes.
